NM stacked enchiladas

We are in the process of making a real treat. New Mexico style stacked enchiladas. These will have a carne adovada base (pork in red Chile) but be smothered in pork green Chile sauce to finish. I like to first get some smoke on the pork. In the kettle vortex with a lump of mesquite. Stay tuned for the build.

These will be red Chile with the interior meat and green Chile gravy over the top. Red and green, flavor bomb.

BTW, my fam and I absolutely love Mexican style food. This sounds so good… Would you mind sharing your recipe?

The build. You need to flash fry the corn tortillas for texture, you can also cook them in a skillet or comal just to lightly toast.

A little bit of Chile sauce goes on the bottom of the pan first, then line with tortillas. I cut some in half to fit the cake pan (this is a casserole of sorts)
Then on top a layer of beans and some meat, this is with red Chile sauce.

Then another layer of tortillas and repeat.

Top off with one more layer of tortillas and top with pork green Chile gravy and finish with shredded cheese.

Bake at 350 until cheese is melted and bubbly.

I haven't seen a stacked enchilada for a long time.....ie the last time was when I was in New Mexico....They were a common thing and tasty! Nice 9x12 dice for sure!
