A mile down the road from a hunting ranch my buddy and I leased for 15 years was a place where someone was raising American Meat goats. One day I guess a fence broke and there were at least a hundred of them on the road to the ranch, maybe 200. When we got to our ranch gate there were a few really fat ones inside the fence. I put a bullet in one's head, threw into the jeep, hauled it to the gutting tree, and then to the skinning shed. I hung it a couple of cool days, then parted it out into game bags and tossed them into a 165 quart ice chest full of frozen OJ jugs. Once home I aged the meat in my garage fridge for about three weeks. I love venison and lamb, and the meat from that fat goat was one of the best things my partner and I have ever enjoyed, not a bite went to waste, it was delicious! I whacked a lama near the ranch too, edible, not near as tasty. RAY
