Newby needs lots of help..smoker and grilling

I live in Las Vegas NV or as it is known locally "Lost Wages, NV"....

I have been using a small portable gas grill for the last 3 years. It is OK, but I get tired of having to keep changing the little bottles out and since it is small, about the best you can do is cook burgers, hot dogs and small steaks. So I am thinking of getting a bigger gas grill.  I also have a cheap  charcoal kettle grill, but seem to never be able to get the dang heat right on it and things either over cook or under cook. I also have a LUHR JENSEN Big Chief Front Load 50 LB Smoker that I just got recently and have yet to get the smoking thing down, a few things turn out OK, most other things are to dry and over smoked.  So I need lots of help...
