Newby needing clarity

Hi. I'm from Simi Valley, CA, too old to be pretty, and relatively new to my hobby. I have used a Masterbuilt 30" Digital Electric Smoker for the past 2 years, and a Camp Chef Woodwind for the first time on 9/10/17. Raised by a hippie and a Rocket Scientist, my problem solving methods include both Random Approach and Exact Measurement. My tastes lean heavily toward beef, pork, and lamb- but my diet requires a lot of chicken and fish (I hate nagging doctors). Warning: I may not have answers, but I have a LOT of questions.
