Well I'm in Hawaii and started smoking a while ago. Now that I quit, I want to smoke meats. Since reading the threads here it seem I'm doing it all wrong.
I like the way some of you use PID controllers because my main problem is controlling temps. I hope I'll be able to buy a used one for now.
I have an offset brinkman smoker and learned from this site that I need to put some ceramic tile with gaps to control the temps evenly across the smoker.
Anyway, I look forward to reading all of your experiences and expertise.
