I too just bought the MES 30 for dehydrating and cold smoking meats, gonna start with Jerky, wet cure and brine, using Pop's recipe for the brine/cure with some added goodies http://www.smokingmeatforums.com/t/110799/pops6927s-wet-curing-brine  , these guys and gals here are a great wealth of information and IMO the nicest bunch I have found, I surfed the threads for weeks before I joined, not sure why, well, not true, I know why, I was trying to find the best Forum to join and it turns out SMF here is it !

Hope to see some goodies posted from you, I am starting as soon as my extra racks get it in the next 3-5 days I hope
