Hello All, I am from Illinois. New to smoking. I am using a little cheapie Kingsford charcoal and water smoker from Wal-Mart for $35 to get me started. I love to cook and love smoked meat so this seems a logical progression in cooking. I don't have all the fancy tools just a gauge for inside the cooker and a meat thermometer.
