Wife and I smoked a couple birds yesterday. She made the the rub. OMG, best chicken We’ve ever eaten.
220* for 3 hours with Hickory smoke. Removed from smoker at 157*
20 minutes in oven at 400* to crisp the skin.
Absolutely wonderful. Can’t believe our first birds worked out so well.
