So it was taste test time. On my OCB Pecos I set up three racks of spare ribs. Smoked all 3 for 3 hours at 275. At 3 hours I left one alone, wrapped one in foil and wrapped one with Sweet Baby Rays. All got spritzed with apple cider vinegar.

Cooked them one more hour and was surprised that they were all done. IT of 203 on wrapped and 196 on unwrapped. Rested for 2 1/2 hours mostly cause they were done early! Both the wrapped were borderline FOTB.

Family all had different favorites.

Thanks everyone for all the tips I’ve been reading here. Best ribs I’ve ever tasted.

they look great, nice job. yeah everyone has different taste!
 
Yeah, it's hard to figure out what everyone is gonna like, that's why I cook how I like , but it sounds like all were satisfied, so life is good...

My opinion is all three look like winners :emoji_astonished:
