Newbie in NC

Hey All,

Just got my hands an a 40 in. MES second hand from a co-worker to learn the ropes. Totally new to smoking. Been cooking since I was a kid and don't know how to make anything that doesn't take about 4 hours minimum an a lot of watching. This seemed like a natural choice.
