I wanted to tell everyone hello. I'm new to the smoking scene, I took meat processing in high school I have smoked ham and bacon in that class, but that was 22 years ago. So Im trying to remember everything that I learned. My wife bought me a new 40" Masterbuilt electic smoker. I have smoked spare ribs, game hens and summer sausage. The summer sausage was deer and turned out awesome, now some guys at asked me to make there deer summer sausage and deer snack sticks. So that's little about my self. Thank letting join this site, I'm sure learn a lot on here.
