New to the fine fun art of smoking meats. Was going to smoke a rack of baby backs but hurricane may have my area in its sights. Dorian may skirt the coast but still a little unclear as what will happen still. Rainy today so I will pass.I bought an entry level Dyna-Glow bullet smoker. Smoked a few prior racks and were good but damn smoker had so many air leaks that temps would run away (350degrees... yikes) and when I went to bring it down it wouldnt work. This cut cook time down and i monitored IT with probe and was able to salvage the prior cooks.
TBH I had better cooks with Weber Smokey Joe (14") and small batch of coals indirectly. Im gonna have to also get down the amount of wood to use ....a few rib cooks were a bit over smoked and did notice 2 days later they were great. I know a lot of men here say day later the meat tastes even better .
Bought some Lava-lock and made it pretty air tight and was hoping to go a round today but as mentioned gonna have to wait for the storm to pass and hopefully dont lose power as well.
Great site and tons of knowledge from experienced cooks and very savory recipes on top of it all :-) When the weather returns back to its normal conditions I will hopefully smoke a rack or something and will post pics and details of my day smoking. Y'all have a great Labor Day week end. To all my other smoke bros living here on the east coast of FL, I wish you all safety and minimal property damage. Hunker down and stay alert ,it appears to be a very large intense storm.
