Hey all, as some of you know… we were fortunate so far this year to get some elk down. And having two more elk tags and some Whitetail deer tags… Was trying to make some freezer room… after giving some meat away to fam and friends. Had a small package of Mule deer, elk roasts and wanted to try some pronghorn as it’s been 20+ years since I’ve had any. Figured a small batch of jerky was in order!

Not a long post, but will start with these pics and end when done later today.

From bottom up is Antelope (turbo goat), then Mule deer and the top is Elk.

can't go wrong with that. Are you going to smoke it before drying out?

Thanks for the kind words and likes all, much appreciated! Here’s the finished pics, got a later start than I wanted as had to go help my folks for a few hours yesterday morning. So these finished late last night. Anyway, not fancy pics by any means… but here they are!
