Chamber temperature at 11:30 230
Held 230 till 1:30 then dropped temp to 215.
Out at 3:30 115 IT
Reverse seared at 500 for about 8 minutes then wrapped and into the cooler.
Out of the cooler at 5:30 then into the oven for 5 minutes to heat up.
My wife said better than her mom's but we aren't telling her that gotta keep peace in the family.
