Wanted to introduce myself to SMF.
I have been Q'ing for a few years now. Started with a Brinkman water smoker, worked well during the summer but wouldn't hold heat on those cold winter days. Moved up to a Brinkman Cimmeron 1/4 steel, sepreate firebox, room for more meat, and a halfway decent thermometer.
My meat of choice are pork ribs and butt. I Have been working on creating several new rubs over the past summer (I prefer dry rubs and rarely use sauces as anything but a side offering) but find some of the marketed rubs hard to beat. I normally use 3-2-1 on most of my cooking adjusting as needed to each type of meat.
I am on a quest for the "perfect" BBQ ribs. I don't think I'll ever get them, but its the trip not the destination right?
My experience is so far limited to the backyard and coaching friends who have sampled my smoke and want to make some of their own. My ultimate goal is to compete and maybe enter the American Royal competition, but I'm not there yet. (a few more years).
I happened to come accross SMF by chance looking for information on smoking Turkey. Looking through the threads I found this forum to be a great bunch of people dedicated to helping each other make GREAT BBQ. I look forward to reading more and hopefully helping out someone along the way.

BTW where ya live? Here in MI wind breaks are required Just 3 sides of plywood, and I'm thinking on adding a top W/vent

Welcome to SMF, Stacks! You're at the right place for all kinds of info and opinions on Q. Of course, "perfect" ribs are largely a matter of personal tastes so a lot of that is the trial and error you have already been doing. If ya have questions, just ask; folks here are always ready to answer.

Richtee - I build my fires just a little South East of Kansas City. Wind not as bad here but gets mighty cold. Makes for a challenge to Q in late winter, but noth'n smells better than smoked ribs on a still January day. And the beer is ALWAYS cold.
 
The trip not the destination sums it all up!

The best ribs in the world are usually the ones in your mouth at the time!

On your trip be sure to take in some of the sights, sounds, smells and tastes along the way. May I suggest ABTs? Read on and chime in as you see fit. This is THE place for all things Que!
