Hey everybody. My name is Dan and I've been smoking with a Brinkman Smoke n' Grill for about 4 years. I recently moved from the Southeast (where PIG is king) to East Texas, where it's all about the Brisket.
I usually smoke Boston Butt with a homemade spice rub. Being from South Carolina, I serve it with a vinegar, red pepper and mustard based sauce with cole slaw on white bread.
I usually smoked with Hickory or Oak, but have been experimenting with Pecan since it's readily available here in East Texas. I've tried mesquite twice, and my family just flat out doesn't like it. I probably used too much as it is a very strong smoke. I have tried those smoking pellets the last few times and really like a blend of Apple and Hickory. Seems to work well.
The reason I joined SMF was because I was researching how to smoke brisket and stumbled across the website. I found the "porn" pics awesome, and couldn't believe how interested I was in other peoples techniques, set ups, etc. I can't remember who (Lisa maybe?), but someone was smoking a Butt yesterday, and I found myself checking the website all day looking for updates. When the finished pics finally hit the website, it was awesome. I felt like I was a part of that Butt smokin. So I figured since I've got to learn how to smoke Texas style, I'll be able to get some great advice, and can post pics and give someone else the opportunity to be a part of my progress.
I found a thread last night regarding brisket techniques and started a couple of 4lb'ers this morning. Three hours later a severe Texas storm rolled through spawning tornados. I grabbed the briskets and moved them inside to the oven. I've taken some pics and will upload them later. Oh, no tornados came, but plenty of rain.
Well, thats my introduction. Looking forward to getting better!
