Hey there,

I live near Dallas and I'm new to the competition cooking scene.  Cooking Chili, Chicken, Ribs, Brisket and whatever else might fit into a smoker or dutch oven.  (Is there a Chili forum?) 

BTW, does anyone have any good 'from scratch' chicken wing recipes/techniques they can share?

Welcome to SMF.  I cook here in Texas as well, just Q, haven't ventured into chili yet.  If you haven't joined or found an organization yet, there are numerous ones running events all over Texas.  Those include, IBCA, LSBS and CTBS along with the occasional KCBS comp.  There is usually an event within 100 miles of most Texans in heavily populated areas every weekend.  Good smokin' luck to you in your future comps.
