I'm an old school meat processer from Statesville,NC. Started processing/smoking meat when I was young on our property and had my first meat cutting job at an A&P in 1977.  I've worked in the fancy places like Harris teeter to a processor who processed 100 pigs a week and over 700 beef per year. Now , I run a deer processing place making basic cuts to smoked deer meat, jerky of all kinds, summer sausage, deer bacon, snack sticks, etc.. Reason I joined this forum is to learn some new tricks and maybe share a few. I also have 3 pieces of the early meat processing equipment there is. I have a Hobert pedestal Grinder from 1911, it's a 1 hp brute, also I have the first power driven buffalo chopper ever made, 1911 it runs by a hit & miss motor., it's solid cast iron and is very ornate.  I also have a 1904 sausage stuffer that has a 54lb capacity.  All are made from cast iron.
