Hello all, my name is Ryan  i am from South Dakota where sun shines bright and hot in the summer and old man winter comes out in January.  I love to smoke meat and recently bought a new bradley 4 rack digital smoker.  My favorite food to smoke is bacon wrapped pork tenderloins  and salmon.    Looking forward to meeting you all and hopefully sharing recipes and any tips about the smoker i have as i have been struggling a bit with temp control and what level (bottom, middle, top )to put meat at when smoking. 
 
Welcome to SMF Ryan from the Great White North. What kind of Thermo/probe system are you running, I have a couple bradleys for doing small stuff, Jerky, dinners, fish etc. But I am looking to build to do Sausage, hams, bacon/bellies etc. I have found that a blanket / isu.l wrap in the winter helps for temps. It's been a learning curve to start, This site is amazing for help and knowledge. Explore and ask.
