Hello!

My name is Ross and I've although I just joined I have read a few threads already. I'm from kansas and needed a new hobby. So a buddy and I decided to build a smoker. Turned into more of a smokehouse by the time we were done though haha. Just doing the test run with 4 racks of spare ribs! So far doing very well holding temperature and keeping the draft going.

Thanks guys! I'm sure I'll be posting and reading here quite a bit! A couple of the racks of spare ribs got a little tough which confused me, I'm used to cooking on pellet grills so maybe something is different with actual wood and propane. But I did 3 hours at 190-200 and wrapped them for another 2 hours at 240ish.
