Just wanted to say hi and thank you for letting me join. I am from Vancouver BC and have only been smoking foods for a few years. I have mainly smoked Salmon and a few other meats but now that I am retired I want to get more into it. I am into food preservation  and am now starting into curing meats. I pretty well make everything from scratch so will most likely have LOADS of questions. :-)

I have a Centro Digital Smoker I bought a few years back on sale. Works great but I want to get a Propane smoker in the new year also. Gradually I wan t to make a cold smoker for cheeses and salamis or sausage and such. My avitar is a picture of my smoker when I smoked roma tomatoes. I dehydrated tham after getting a good smoke flor into them. Wonderful stuff. LOL I want to make some Montreal Smoked meat as soon as the brisket goes on sale. :-)
