Hello from Canada,

My name is Matt and I've just picked up my first offset style bbq smoker.  I've always loved to grill on my propane grill, but pork and other meats just lack that sweet smoke flavor I need.  I cant wait to smell and taste the improvement on my ribs and pork shoulders. And I can FINALLY bbq my first brisket. I am excited to get to all the info and posts so.....later.

Welcome to smf matt! what kind of offset did ya get? Looks like you are only a few hours away from me i'm in harborcreek pa which is just outside of erie,pa!!

 First off welcome Matt to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Thanks Les. My offset is a BRAND NEW GrillPro model with a few mods I bought from a customer for only $30!!!! I was doing electrical work out of town and was helping him move this out of the way...I joked that he could move it into my truck and he said," sure, for 30 bucks....my sister moved away 4 yrs ago and Im sick of moving it around the shop."  SCORE!  The firebox lid has been modded  with an extra hinged cutaway section below the original opening for easier access when loading chunks and chips.
