Just joined Ya'll today so figured I better say Hi.

I had a charbroil off-set smoker for years, had ok luck with it but it was always a pain to keep the heat regulated. This past spring I bought the UDS kit from Big Poppas, Love it, Ribs, brisket, pulled pork, chicken all came out get. Thanksgiving I'll be doing my first turkey on it, it's a big bird #22 so Im going to us the spatchcock method.
