My name is Darrin and I have been bitten by the smoking bug.  I have grilled and done some hot smoking on my old Charbroil offset smoker for years but last month I purchased a 40"MES.  I have smoked ribs and a turkey in it but since last week I have been in overdrive.  Made 25 lbs of summer sausage, 2 - 10 lb. batches of snack sticks, old fashion hotdogs, and chili dogs.  I have a pork tenderloin going in tomorrow morning and have a prime rib thawing in the fridge for New Years day, oh and I have 8 lbs of beef that has been curing since last weekend that will be getting smoked some time this week.  I am not real big into photography but as much as I enjoy looking at the pictures on this forum I may have to start.

Welcome to the board, Darrin! You know when the bug bites. You'll find everyone here scratching themselves.
