Hey all,

just wanted to introduce myself and say thanks, already, for the useful info many of you have already provided to me as I lurked in the background. I’ve been reading your tips and wisdom for a while and I’ve already learned a lot from you. So, thank you.

My neighbor gifted me his old Masterbilt Sportsman’s Elite gas smoker. It’s a crappy little thing, but it gets the job done. So far I’ve done ribs twice and today I am smoking my second brisket. The first was only ok.

Anyway, I just wanted to say thanks and introduce myself. I’m looking forward to learning more from you and getting to know the community.

Understood! Got a brisket in right now. Wrapped it up about an hour ago once it had stalled at around 155. It’s at 165 now. I’ll post pics of the final.

Got some shots of the final brisket. Had a great flavor. It’s still a little drier than I’d like. I pulled it off at about 185 and wrapped it up for about two hours. It had great flavor and was tender. But I didn’t get a lot of really juicy bites. It felt a bit dry. Everyone raved, but I still think I’ve got some room for improvement .

But it was a great experience. Gonna do a chicken next...
