Been using a Weber kettle since I got out of the Army, got married, and bought a house. Most of those years I used it as a BBQ - cooking over open coals, sometimes successfully, and sometimes ending up with unintentional 'chicken jerky" but that usually had more to do with too much beer than with any cooking skills.

About 30 years ago, graduated to a Weber Performer (still going strong) and sometime after that, got a Maverick controller and began smokin! When that gave out, I got a BBQGuru PartyQ, which served me well until last year, when I moved up to an UltraQ.

I only have ever used charcoal or actual wood in my Webers, and never have I ever used gas. That's not BBQ, that's just cooking outside, instead of in the kitchen. JMHO.

So, the advent of electronic controllers for something as basic as a charcoal fire has, I think, revolutionized meat smoking in a way I could never imagine 30 years ago.

And, just like getting a new smartphone or smartTV - each one is smarter than the last, and all of them smarter than me - a new device brings new questions on how to best use them. So I joined here to try to find an answer or two... and once I post this, I will post a question about the Set Temp display on the UltraQ.
