Hello everyone, Ricardo from Dallas TX here. Decided to join this forum to learn more about being on the smoker. It all started with a little family reunion competition on a brisket. Turned out I ended winning first place. This gave me the motivation to try to start a catering business. Im currently in the process of building my first 250 gal tank smoker. Im open to tips and trick if anyone has any. I still have to add the diamond plate to the trailer to prevent the burning the wood floor.
