hi every one ive been looking these forums the last few days and im going to try to smoke some ribs this weekend but im kinda needing some help i have a good smoker i think its from oklahoma joe's in perry,oklahoma my uncle gave it to my mom and mom gave it to me :) its like a 400.00 smoker but where can i find lump coal or is charcoal briquets good enough? and do i need a wireless thermoerter and is there a place that sells smokers and supplies in the okc,moore area that is open this weekend?

I am not sure what stores you have near you, but I saw some lump charcaol at Lowes the other day. They have lots of BBQ supplies.

Welcome to SMF. Glad to have you here. You will need to have a therm to measure grate temp to make sure you have accurate temps. Ribs you should cook either 3-2-1 or 2-2-1. Sign up for the 5 day ecourse if you havent. Lots of great help there.

Welcome.You will want to get a couple digital thermos and always have one near your meat.Good idea to keep a log of fuel amounts,wood,weight of meat etc.I still reference mine from cooks from 10 years ago.

First off welcome josh to SMF. You'll like it here cause there are alot of good people here that would just love to help you with anything to do with smokin. Next thing you should do is sign up for the E-course it's free and very informative. Then go get a thermometer or 2 they are a must in the smoking world and get a good one and test it with ice water and then boiling water. Ice is 32* and boiling is about 220*. As for your ribs you can use the 3-2-1 method and you should have some mouth watering ribs to boot.

Welcome smokeyjosh to SMF. Can you send us some photos of your smoker? When you say "its like a 400.00 smoker" are you meaning its a 400 gallon tank? Does it have a firebox connected to it? Can you burn wood in it besides what you asked for in lump coal or charcoal briquets.
I'm in the process of building my smoker now. However in the past I used wood to cook with. I usually have some pieces of wood soaking in Cider Vinegar. The longer, the better in soaking. I’ve heard it like this soaking some wood in Cider Vinegar for long periods of time is just like aging fine wine. I also use Apple juice to soak the wood in too. On the back of the ribs is a fine membrane that you have to peel off. This will make the ribs fall off the bone when eating them. I also use yellow mustard to cover the ribs with and then put on a good rub.
