How do you deal with the cold outside temps
Dress warm! I got a MES for Christmas, the coldest I have smoked was -26C. The MES is insulated and you will have no problem maintaining temperature. I would suggest you put a can on the exhaust to get the condensation/smoke away from the controller, I had frost forming on the control panel. I have also had a run away smoker once, I’m thinking condensation got into the controls/electrical connections and confused the smoker. Just a theory. Today weather forecast is calling for a high of -18C. Might be a good day to cold smoke some cheese!
Just reread your post you have a Smoke Hollow not a MES, I would think your smoker is insulated as well as my MES.
