Hi everybody, just joined up to learn some more about the food I love. I've lived in Dallas, Tx for the majority of my adult life, grew up in San Antonio and spent some time out West on the South Plains in the Lamesa area. Soooo, I've eaten more than a little smoked meat growing up and never get tired of it. I'm not sure what my skill level is but in my mind I would say I'm pretty basic. I like to smoke a good brisket on occasion and also enjoy chicken, ribs and pork off the smoker. Heck, I like it all. I look forward to learning more from everyone here on the forum about smoking meat. Have a great Thanksgiving everybody and I hope those Turkeys turn out just like you want them to.
 
Hello and welcome to our group!  You'll find these forums are a great place to share ideas on smoking, grilling, etc.  There are lots of friendly folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need something...someone here will surely have the answer.

Thanks for the welcomes. My hat is hanging in NE Dallas not too far from White Rock Lake. I've got the Turkey on the smoker this morning and fingers crossed that it gets done in time for the 2:00 meal my wife has planned. I  have to get stuffed and in front of the TV for my Cowboys. Y'all have a great Turkey Day.
 
I grew up in Dallas and Mesquite, Like that area where you are at.  Have you seen the "Container House" on White Rock. Built out of shipping containers, stacked and turned kind of ultra modern pretty neat.  Glad you joined, what time did you put your Turkey on ?

Hi Gary, I ride my bicycle at WRL more than a little but I'm not sure where the container house is. The Turkey went on about 6 A.M. It turned out pretty good. I let it cook at little too long and the white meat dried a bit. The dark meat was nice and moist.  I usually smoke brisket, chicken, ribs and pork so the turkey was a new experience. I learned a little and will adjust heat and time the next time around.
 
Put in Container house WRL Dallas in your search engine it will come up and you can get a land mark. What temp did you do your turkey at? I try to stay at 225 and check internal temp pretty regular. Glad to hear from you Post some pictures.

Hi Gary, I found that Container House. It's up on Peavy on the North end overlooking the lake and downtown Dallas. It's off the lake a bit. It will be interesting to see how they finish it out. Great spot with a great view.
