I ran across this site from searches and how to get rolling on smoking.
My wife bought me a 18" WSM for Christmas. I do grill a lot on a gas grill. My country neighbors love it when I grill. I tried ribs a few times on the grill at low temp but not the results I was looking for.
We rarely go out for dinner because it's always a let down. One of my favorites is beef brisket. My wife is a big fan of pulled pork and ribs. It's rare that we find a spot that actually has these items and they are prepared correctly.
We have talked about getting a smoker for 6 months but never got around to it. It was a nice surprise that she got me one :) My wife also bought some baby back ribs for me to smoke on the WSM for new years eve dinner. That's another reason I stumbled across this site.
I already found some interesting recipes and have watched a lot of videos on youtube. You never really know what recipes are worth trying. I don't want to disappoint her.
I plan on buying a couple bags of briquettes and doing a dry run to monitor temps and burn off any production junk. I also read somewhere to smoke something in it (not planning to eat it lol) to season it a bit. (cant find that info again)
