Thought I would join and share my story to date as I have been using your forum and ideas/ posts for the last few weeks as I made my decisions as to which Smoker to buy and therefore what mods might/ will be needed.

So my mate got himself a Weber smoky Mountain last summer and has been producing some pretty fine results, but I wanted to get a little deep into it and having read Aaron Franklin's book cover to cover decided that it was going to have to be an offset for me.

Due to a wife that thinks I have too many 'toys', I had various budget constraints and being in the UK not too many choices soI went with the OK Joe Highland. I got it from the Asda (Walmart) website for £280 ($360 ish). So far I have got it assembled and seasoned with a 1st cook planned for this weekend.

I have the engineers at my work sorting me a baffle & tuning plates, and I have sealed the main door and the fire box,just need to fit an extension to the stack to get it down to grill level. 

1/2 tonne of seasoned Oak was delivered at the end of last week, so I'm good to go. 1st up will be some ribs. 

Does anyone know where I can get some Tru-tel thermometers in the UK?
 
Welcome! I f you haven't found it yet there's a U.K. Group here and they could probably point you to therms you're looking for. Sounds like you're ready to get after it. Forgive my Mississippi to English translation gap but are you saying 1/2 ton as in 1000lbs? Can't wait to see them ribs, oak is my current favorite as it grows at my house. Again, welcome.
