New Grinder Help!

So... I started out with my kitchen aid attachments... then quickly bought a 5# stuffer. Great investment. Now I'm ready to buy a better grinder... 
I was leaning towards the #12 LEM or #12 Cabelas brand... however, have the opportunity to buy a #8 LEM (big bite variant) for $140 (NIB). 
I'd also consider the $99 #12 kitchener from northerntool or equivalent from harbor freight.... 
I'm having a hard time justifying $400 over the $140... though not sure how the LEM#8 compares to the others... I'm leaning towards the #8 big bite since it has the same neck diameter anyway as the #12 LEM that I was considering for $400.
 
A LEM #8 for $140....No Brainer!  That will blow the Doors off a #12 Kitchener, which seems to be a great grinder...JJ
 
Ok, you officially have the groups permission to "steal" that man's grinder for $140.  Jump all over that before someone else does. That is one of those once in a lifetime deals on a LEM new in the box.
 
So got the lem... can't wait to use it. Any recipes anyone recommends? So far my sausage making has mostly been lem seasoning kits...
I also have the 5# stuffer which is awesome...
BTW if anyone is looking academy has this grinder for $249... not as good as my 140 but still a good deal.
