Hey there my names Matt just built my second brick pit cooker in the back yard made a couple smokes on it. i love some good old NC pit cooked bar-b-q nothing like making it yourself is the way i see it but here recently i tried chicken and i destroyed it it cooked to death i don't know what happened but the pork was not half way done and the chicken was burnt to a crisp so i changed the pit design from fire directly underneath to the fire to the side and now it wont get over 200 degrees gonna still try a pork loin on it tomorrow and just give it a lil longer ill see how it turns out but anyhow good to find a place to jaw on about the love of making bar-b-q and other kinds of meat look forward to talking with yall.
