New freezer build

I recently acquired a stainless freezer and read enough to know that I'll need to remove all of the foam insulation. My question is, what insulation is best to replace it with. Thank you in advance.
 
Roxul or rock wool insulation from any home improvement store. It is good to over 2000 degrees with no off gassing. I have it in my fridge smoker.
 
How you deal with all the plastic of a cooler to smoke in.
Remove all plastic from interior and door. Replace with raw steel. Doesn’t need to be stainless. Check out my old Crosley fridge smoker on this site. All the pics and info is in there. I’m no expert but it works perfect for a stick burner.
