My old roommate from the Army is bringing his family to meet mine this weekend and I am going to smoke some ribs for the occasion. I would do a butt or brisket but I teach Saturday school this weekend so will not have time to tend to such a big task. I need a suggestion on something new that will knock his socks off he is a CW3 in the Army now and has served a couple tours in the sandbox just want to give him the royal treatment while we catch up on old times. Man I am stocked for this visit going to go through a couple of cold ones this night. May even get the UFC fight Saturday night for good measure.
 
Make up some abt's to go with hte ribs, hand him a cold one and tell him thanks from all of us for the job he is doing

Two things I love to make and break out when I am trying to impress are cherry bombs (or whatever you want to call them) which are pepper shooters (a cherry pepper stuffed with proscuitto wrapped aged provolone and marinated in olive oil then wrapped in sausage and smoked. You can find the peppers in some fresh mozzarella/olive bars in supermarkets or in the Italian or ethnic isle in jars.

Go to the local butcher and get him a nice thick T-Bone steak, grill it up to perfection. Go ahead and do the ribs too!

I agree with the ABT's they are usually a big hit. I would also consider some of Dutch's Wicked Beans. How about some smoked deviled eggs?
 
Yo ECTO1, its great when old friends share a meal, and even better when old vets get together.

The main ingredient to this meal is the fellowship, you don't want to be so busy you can't enjoy the visit and the time you and your bud have together.
Ribs and lots of them is fine, try to have some dry, some hot, some sweet, so you cover all your bases. The hot n sweet are just the difference in BBQ sauce.

Sides, try to have two, one simple and one with a little flare.

A good salad, and lots of either crusty bread or toasted garlic bread.

Appetizers, smoked chicken wings or wings on the grill, or in the oven, there are lots of recipes, its simple and fairly easy. While everyone is high on ABTs, our group are ready for something else. Thai or Teriyaki or HotnSpicy shrimp or beef or chicken on a stick grilled or smoked then grilled.

My last Fattie was hit or miss but it was my first so I think I can try that again. Maybe a Hamburger Fattie some ABT's and can you smoke Crawfish? Maybe some shrimp?
 
First let me say thank you and your buddy for all that you guys did in country. Our son is over there now. I'm going along with alot of the guys here and say go with some Abt's it's really hard to go wrong with them. Then the ribs are also a good idea so you two will have a few hours to talk and rememebr the good times. It's a good and can be delish dinner. I would just use the 3-2-1 mathod but I personally like to shorten the foiled time in half so that you still have alitle pull to the meat coming off the bone. Then just slather your favorite bbq sauce over them with about 20 minutes left and they should be really good. Everyone loves BBQ ribs.
 
Ok everything went well except one thin my friend and i drank so much beer we forgot to eat so the food was for the wives and kids. good times thanks to all.
