So tomorrow I'm looking to switch it up from the usual pork butt and tenderloins I do.  I want to smoke up a boneless leg of lamb and a cornish game hens.  Never done either one, and couldn't find too much from the little research I've done.  What would be the best way to cook these?  Should I brine?  Rub?  Best wood to use?  Temp to smoke at? And IT to smoke to?  And about how long may they take to cook?
 
We just did some cornish game hens on the minitisserie. Kept it simple and rubbed the hens inside and out with Lawry's seasoned salt and pepper. I put a bit of chipotle on mine.Cooked over KBB with cherry and Kiawe for wood smoke.
