My salami and snacking sticks way too salty?

I agree with @SmokinEdge to toss it
It appears you substituted the High Mountain cure blend with the Canadian cure which is already very salty. You just overdosed meat by mix and match.

Welcome to SMF and as we repeat a lot to people, please ask questions before you ruin a lot of valuable meat.
Stop over at roll call and introduce yourself.

Where did the open bag of cure come from ?? And you used 1T and 1t of each cure package ??

What about the seasoning pack... Did you use that ??

As @chopsaw said the kits come with 2 packs, One being the seasoning (darker color) and the other being the cure (cream color)...

I'm confused on where the OPEN bag came from...

I too am curious where the open pack came from. I can’t tell you because I don’t know. But in my mind there was only 2 types of cure, cure 1 and cure 2. I do know that nobody ever gave me anything to do any salami or pepperettes.
I’m going to toss out the remainder of my batch.
Does the OPEN bag pic seem like cure 1 to any of you, by the writing on the package?
And yes I used the seasoning for the mixture as per dosage.

I did not use double amounts of cure, I used both but recommended dosage.

This will most likely be the last post on this thread. Well I’ve learnt that there are more than just cure 1 and cure 2. And that High Mountain use their own brand of cure, with their own dosage. I threw my almost 4 lbs of moose snacking sticks 😢. Live and learn.

Sucks man. Hang in there. We've all made mistakes and I'm sure I'll make more in the future. Good thing you found your answer though. Could have been much worse than 4 lbs of meat.
