I love cooking and brisket is one of my specialties! I have been asked to smoke a 5lb gator using a gas grill, any suggestions
 
Baron, welcome to SMF!  Mastering brisket is always a sign of an experienced pit master.  Alligator?  The boys from Louisiana will have to jump on that one.

Welcome to the forum Baron!  I've only seen alligator cooked hot and fast.  Fried gator "on a stick"  is popular at the festivals.  I've also seen ka-bobs with cubed gator meat.  I hope someone else has some advice for smoking the meat.

Welcome aboard!

Gator tail has to be cooked hot & fast or low & slow.

If you try anything in between it will turn out very rubbery.

We cook it all day long in a crock pot for gator gumbo.
