BTW i love Deutsch Kase Haus!   Gotta get up there in the Summer for some cheese supply....even though my butcher carries some from there.     Make a trip to Middlebury and get it straight from the horses mouth.

Looks like it got alittle warm?
 
I don't think - they were on bottom rack - it was 40 degrees out....
 
They were closer to the smoke that's all - they were on for four hours.
 
Next time put them on the top rack and maybe some foil over the amnps to block some of the heat.
 
I really think they are fine.....but 6 lbs would not just fit on the top rack.
 
Did you use pellets or sawdust. I have smoked with the sawdust in my AMNPS and it burns a lot cooler than the pellets.

Oh they will be fine. I had some turn like that and it got hard. I just cut it off
