My first smoked sausage

I've played with some breakfast sausage and been wanting try a SS. Well few weeks back @SmokinEdge offered up a BF ham recipe to members. He was gracious enough to even send it to a newbie. I chose to try a loin first.
So my plan was to do it along with some bacon. Just so it would have company in the smoker. Well PB ended up being way to thin for bacon. Now loins didn't have a smoke buddy. So ask Eric about a sausage recipe and I wanted it spicy and he delivered!
Only pics I ended up with was on the smoker.

Oh! Those wrinkled sausages was because I got stupid and stabbed several for temp. Lesson learned
 
Thanks for the likes. I have a PID coming from @JC in GB for my MES. So I'm ready to try improving my results and try different sausages.
 
Nice looking hams. I have been meaning to try a ham myself. I'll need to go looking for the recipe.

Basically it was and I probably got lucky . When I decided I wanted to try this. I bought a sausage maker stuffer and casings from Syracuse casing. Hag and Sheep. Wanted to link my first breakfast sausage. My stuffer didn't come with a small enough tube for the sheep. So I stuffed it in 28-32 hog casing. Which was way to big to get cooked all the way through without torching the outside.
This time went smooth with the hog and only popped the sheep once. Soaked them in water for a day changing water a couple times. Then added some baking soda the night before I stuffed them.
Next time will probably end up a disaster and I'll be wondering why I tried this! LoL
Nah! I actually found it kinda therapeutic. Amazing how much time will go by doing this. Then the clean up afterwards
 
Very nice looking bacon and ham. Nice load of sausages also.
