I made my second Brisket in four years yesterday. My first turned out soooo badly I haven't attempted another since. I was very impressed at how moist and tender it turned out. Excellent smoke ring and bark also.


  Thanks to everybody for all the posts I've been reading which helped in the finished product. This forum is very helpful when trying to figure out what I've been doing wrong! You all are the best!!
 
I've never used an injector while smoking. A good friend of mine injects turkeys before he deep frys them and they are outstanding. The brisket was strictly a dry rub and a trip to the smoker.
