My Favorite Ribeye

Ribeye should be at least 1" thick.

Coat with thin coating of EVOO then coat liberally with "Montreal" Steak Seasoning.

Let sit to come up to room temperature while firing up grill. I use a Big Green Egg and let it go wide open. Once steak is at room temp and grill is at least 550 degrees place steak on grill for 2 minutes, turn steak for another 2 minutes. Then turn again and rotate 45-90 degrees for a nice grid pattern.

Close all vents and close down heat let steak roast for 3-4 minutes remove from heat let rest for 5-10 minutes and enjoy a nice medium rare mouth watering steak!
