Wow, that looks like a lot of fun in that cooler. I have noticed no difference in flavor or quality between bone in and boneless shoulders. I like the bone in as it is very satisfying pulling the bone out of a perfectly cooked shoulder.

If a deboned butt is loose, tie it up and it will smoke just fine.

You'll be fine. As someone has already said, you're cooking by temperature, not time.
