Well, for my birthday weekend, we had a 2-day race at a track about 2 hours away and decided to make a camping opportunity of it with my bro-in-laws 35 ft motor home. I had decided to do some pulled pork for the trailer buffet (food for the crew, myself included), and intended to smoke it at the track. But with my propane smoker converted to natural gas, then converted to thermo-stat controlled hybrid electric/natural gas, then modified to burn propane AGAIN with electric thermostat needing to have 110V all night while the butt smoked, I decided that the gas required to run the generator wasn’t worth it. So I simply decided to smoke it Thursday night and re-heat at the track day of. Slathered with mustard and a typical rub enhanced with lots of brown sugar, I started the smoke at 4pm with my AMZNTS and pitmaster blend. After 6 hours, I re-loaded the tube smoker and lit it off, in a hurry I must say. After pulling it to foil at 165, I noticed the tube smoker went out on me shortly after I went to bed. I didn’t let it burn in long enough initially, that was my mistake completely. FOLLOW THE DIRECTIONS and it will work perfectly! Since I was heading into work, I loaded the foiled butt into the oven to let it finish. The wife pulled it out at 195, as we were looking to experiment with different textures. She wanted a chunkier pull on the pork. It worked perfectly! The finished product did lack the typical smoked flavor I like, but it was still very good. More like a roasted pork butt with rub. The pork flavor came through well. And I will shift my normal 205 finish with the 195 from here on out. I don’t have a sandwich view, but topped with a little SBR Honey Chipolte and homemade pickled jalapenos, it was wonderful! Oh, and a shot of my birthday cake courtesy of my buddies wives
