We decided to have luau this 4th and tried out some kalua pig in the smoker. I purchased a 6lb pork butt w/bone in and seasoned it with hawaiian sea salt.... then wrapped entire butt with banana leaves and placed in foil tray. The finished product is below after smoking for 6 hours at 325 degrees.
 
Looks good.  Does it pick up the smokey flavor with the leaves?  It seems like they might shield it in some way.
 
I  love Kahlua Pork and yours looks mighty tasty
