I've cook many a steak in my time my 1st time doing this beast. Did about 35 min on the offset with oak wood to IT of 110 then seared it on my little 14in weber kettel itbarely fit in there. SPG is all I use to season it. The wife and the dog both knawled on the bone afterwards!
