3.5 lb pork loin. Trimmed it and put on some maple
Cure .. vac sealed and in the fridge for 11 days
Flipping it each day

( my birthday) took out of the fridge and soaked it for two hours in cool water the divided it and tied it to keep its shape Brushed it with maple syrup before cold smoking in cherry pellets for 3 hours
