What differences have you noticed between these when used as a base to make rub stick to your meat?

Do they contribute to the final flavor of your smoke?

Is one better than another for certain types of meat?
 
I don't notice much difference but my wife's pallet is more sensitive and she doesn't like mustard.
 
I don't use EVOO as it was not designed to do this type of cooking. I use Mustard for meat and pork and butter for chicken
