A while back I got a case of tri-tips for 3.00LB . So today I did a reverse sear. I started with a coating of SPOG and got the MES40 going with 1 row of oak pellets in the AMNPS. MES temp is 225 degrees so in goes the tri-tip for 1.5 hours. I removed it IT of 124. Then onto the gas grill at 725 degrees. A couple of minutes each side then pulled to rest. It climbed to 135 during the rest.
So here ready to come out of the MES

then I let it rest for a few minutes before it is headed to the grill.

i checked my Theropen against a cheapo

the rest between the smoke and the sear is to help keep more of it medium rare instead of medium rare in the center and getting more cooked as you go toward the outdide wjich is well done. That trick works a lot better with about a 1 1/4" - 1 1/2" steak. It was the first time I tried it with a tri'tip. It was fork tender.

I just recently have been able to get tri tip here. I haven't seared one yet. Gotta try it

Thanks Adam. Glad to hear they now have tri-tips there. You gotta do a reverse sear. It will make you kiss your sister for another one (maybe that is an Arkansas thing!).

Thanks! It was miss marked because the next day i went back to get more and it was 6.00 LB early the next morning. I'm glad I got a case but wish I had bought 3 cases. I can't buy hamburger for that.
